Chocolate Chip Cookies

Chocolate chip cookies are a favourite on everyone’s list. Bake some this weekend. The kids will love you for it! Or bake these simple drop cookies together as a family.

Of course, these cookies aren’t just for kids. We’ve swapped out regular chocolate chips for bigger chunks of high-quality chocolate bar pieces. So, add your favourite chocolate. Either milk or dark chocolate will be delicious.

Chocolate Chip Cookies

Servings 5 dozen cookies

Ingredients
  

  • 2 ¾ cups cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup butter softened and cut into cube
  • ¾ cup granulated sugar
  • ¾ cup brown sugar packed
  • 2 eggs large
  • 1 teaspoon vanilla extract
  • 12 ounces dark or milk chocolate chopped

Instructions
 

  • Preheat the oven to 375 F.
  • Whisk together the flour and baking powder in a small bowl.
  • In a large bowl, beat together the butter and both sugars, on medium-high speed, for 5 minutes.
  • Add one egg and beat for 60 seconds.
  • Add the second egg and vanilla extract. Beat for 60 seconds more. 
  • Scrap down the sides of the bowl.
  • Add the flour. Mix on low speed just until combined.
  • Refrigerate the dough for 10 minutes.
  • Line two baking trays with parchment paper.
  • Drop the Chocolate Chip Cookie Dough by the tablespoon onto the tray.
  • Bake until golden brown, approximately 10 minutes.

When were Chocolate Chip Cookies invented?

Ruth Wakefield the owner of the Toll House Restaurant in Whitman, Massachusetts found herself in a baker’s worst nightmare, back in the 1930s. Rushing around, she hadn’t set out all the ingredients to bake her nut cookies. At the very end, when she was supposed to add the nuts, she discovered she was out.

With hungry guests arriving, she didn’t have time to go to the store. Instead, she reached for some chocolate she had on hand. The rest was cookie history.

How to make crispy Chocolate Chip Cookies?

The debate continues. Should these cookies be chewy or crispy? Our recipe, the way it is written here, makes chewy cookies. The butter and sugar are creamed together. The sugar creates air pockets in the butter resulting in fluffier cookies. We also allow the dough to chill in the refrigerator. This gives our cookie more bite and texture.

Now, for crispy chocolate chip cookies. Skip the creaming stage. Instead, slowly melt the butter in the microwave and let it cool. Then combine it with the sugar. Continue to make the cookies as specified in the recipe. Do not refrigerate the dough. Just drop and bake. This method will make your cookies spread out resulting in crispy cookies.
