Florentines
As bright and beautiful as a stained-glass widow! At Pasticceria Gelateria Italiana (PGI), we make The PGI Florentine extra thick, with roasted almonds and candied fruit. One half is then dipped in dark chocolate.

Palmiers are made from strips of puff pastry that are decoratively folded and sliced. Then, they are sprinkled with sugar, before baking.
These cookies resemble palm leaves, hence the name.

Alfajores
Alfajores (ahl-fah-HOA-rehs) is a Latin American favourite! Two light buttery cookies are sandwiched with a filling.
Try the dulce de leche variety. It’s made by slowly caramelizing milk and sugar. This is the traditional filling of alfajores.
