Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • teaspoon ground cloves
  • 1/2 cup butter cut into cubes at room temperature
  • 1 cup granulated sugar plus extra sugar for rolling cookies in
  • 1 large egg
  • 1/4 cup molasses

Instructions
 

  • In a medium bowl, whisk together the flour, baking soda, and spices.
  • Cream together butter and sugar, in another medium bowl for 5 minutes on medium speed.
  • Add the egg. Beat for 1 minute. Scrap down the sides of the bowl with a spatula.
  • Add the molasses and beat until combined.
  • Sprinkle in the flour. Beat on low speed for 2 minutes more.
  • Refrigerate the dough, covered in plastic for 1 hour.
  • Preheat the oven to 350 F.
  • Line a baking sheet with parchment paper.
  • Roll the Ginger Molasses Cookie dough into 15 rounds.
  • Place granulated sugar into a medium bowl.
  • Roll the cookies to cover in sugar. Then, place on the baking sheet.
  • Bake cookies for 10-12 minutes.
  • Remove from the oven and allow to cool on the tray.

    These cookies are great tasting.

    I have made them several times and changed the butter for lard or shortening. At the same time I would also use the different types of molasses (fancy, cooking and blackstrap) and each type of recipe change gives the cookie a different taste. worth trying
