Simple Syrup
Simple Syrup is so easy to make. It is simply equal parts water and sugar. Heat on the stove top until the sugar dissolves. Then let it cool before using.
This syrup has its place in the pastry kitchen, especially when it comes to cakes. Sponge cake readily absorbs simple syrup and stays moist. You can also use Simple Syrup on pound cakes.
Simple Syrup can also be flavoured. A flavoured Simple Syrup can be used to brush on fruit cakes when you wish to cut down or eliminate the alcohol.

Simple Syrup Variations
Spiced
Spices really shine through in a simple syrup. Add whole spices to warm simple syrup and let infuse for a least 30 minutes. Think cinnamon sticks, whole cloves, or star anise.
Vanilla
Adding half a vanilla bean to simple syrup is divine. This is our top suggestion to use on any type of pound cake or to heighten the flavour.
Citrus
Adding citrus peel and infusing it into warm Simple Syrup is delicious and fragrant. Try this brushed-over fruit cake when using a lesser amount of alcohol or eliminating it altogether.
Lemon
Add two tablespoons of freshly squeezed lemon juice into your Simple Syrup. It’s especially delicious in recipes like Lemon Loaf Cake.
